Christmas trifle recipe
Everybody
loves trifle and it just screams Christmas to me. It's a special occasion dish
that requires a bit of preparation but it's always worth it!

Ingredients:

1pkt strawberry
flavoured jelly
·
1 pkt lime jelly
·
6 cups milk
·
6 tbsp custard powder
·
6 tbsp sugar
·
600ml cream, whipped
·
1 punnet strawberries
·
1 tin (825g) sliced
peaches
·
1 tin (425g) mango
slices
·
1 swiss roll
·
1/2 cup or sherry or
orange juice
Method:
Prepare jelly as per packet instructions and
refrigerate.
Prepare custard as per instructions using the
custard powder, sugar and milk. Refrigerate.
Whip cream and refrigerate.
When ready to assemble, drain the peaches and
mango.
Slice the swiss roll and lay in the bottom of
the bowl. Sprinkle over the sherry or orange juice.
Lay ingredients in the following order: Green
jelly, half of the custard, peaches, red jelly, custard, mango and then cream.
Smooth the cream out and decorate the top with
the hulled and halved strawberries.

This recipe takes a
bit of preparation but it's worth it in the end.

You can make this the
day before you need to serve it. I think it's actually better 24 hours later.
·
You can exchange the
sherry for orange juice for a child-friendly option.

One pan lasagne recipe
If you really love lasagne but don't want to wait hours and have a sink full of dishes then this recipe is for you. It has all the delicious flavours of lasagne but this recipe is quick and easy!

Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 500g minced beef
- 4 cloves garlic, crushed
- 1 tbsp Italian herbs
- 1/2 tsp salt
- 1/2 tsp pepper, freshly ground
- 1 tin (410g) crushed tomatoes
- 1 bottle (690g) passata (Italian cooking sauce)
- 3 cups (750ml) water
- 8 dried lasagne sheets, broken into pieces
- 250g cottage cheese
- 250g shredded mozarella
- basil leaves (to garnish)
- parmesan cheese, grated (to serve)
Method:
Step 1. In a large frying pan, heat olive oil over a medium heat and fry onions until translucent.
Step 2. Add minced beef to the pan and break up well with a wooden spoon until browned.
Step 3. Add garlic, herbs, salt and pepper, crushed tomatoes, passata and water. Stir well and bring to the boil. Add lasagne and stir well, cover and cook over a medium heat for 20 minutes, stirring every few minutes to ensure that the lasagne does not stick together.
Step 4. Spoon cottage cheese into the pan and gently stir. Heap piles of mozarella on top of the mixture, cover and remove from heat. Leave to sit for 5 minutes or until melted. Top with fresh basil leaves and serve with grated parmesan cheese.

Notes:
- You can use pork and veal mince instead of beef mince for authentic Italian flavours.
- The lasagne sheets really want to stick together in this recipe. Makes sure that you keep an eye while they are cooking and seperate them with a spoon.

Lemon Cheesecake

For Base
- 1 pack White Wings Lemon Cheesecake 445g
- 90g (4 ½ Tbsp) margarine spread or butter, melted
For Filling
- 310mL (1 ¼ cups) milk
For Topping
- 125mL (1/2 cup) boiling water
- 60g (3 Tbsp) sugar
- Preparation time: 15 mins
- Chilling time: 60 mins
- Serves: 12

Base
Empty contents of biscuit base mix sachet into a bowl. Add melted margarine spread or butter and mix with a metal spoon to combine. Press the mixture firmly over the base and 5cm up the sides of a 20cm round springform pan. Refrigerate whilst preparing filling.
Mix
Place the milk into a large bowl. Sprinkle the filling mix over the milk. Using an electric mixer beat on low speed for 30 seconds to combine. Increase speed to high and mix for 2 minutes until thick.
Fill
Spread filling into biscuit base. Refrigerate whilst preparing lemon topping.
Top & chill
Combine the contents of the topping sachet and sugar in a heatproof bowl or jug. Slowly stir in boiling water. Whisk with a fork until well combined. Cool for 5 minutes. Spread topping over cheesecake. Refrigerate for at least 1 hour or until firm.
